One of our favorites is the Silver Springs State Park. You can rent kayaks and get right in the water for a few hours. Or just walk the trails that meander through the scenic park. Make sure you check out the statute at the bottom of the main spring. Look up the history on this, its a neat story. Also you must take a glass bottom boat ride. Fun to see the aquatic wildlife from above. Sometimes a little scary too(but fun as well).
Another favorite is The Santos Trailhead. Here you can get your bike and ride for hours. A few local shops rent bikes also. If you are an avid mountain biker or just a beach cruiser type, there are trails for you. Many technical options to ride through rock gardens. And many tree shaded options to just cruise and relax. This is a good way to unwind after a long day of house hunting. Many chances to see wild life also. Either one of these parks are nature at its best!
